One of the most startling things in Assassin's Creed in general is the height in which one falls, from around 20 stories, into a small pile of hay. That can't be possible in real life; go on, I dare you to jump into a little pile of hay from a skyscraper.
Other than that, what I love about the AC series is the immerse environments. Not so much the plot (which I don't really enjoy) or the gameplay (which borders beyond frustrating sometimes). One day, I would like to go to Florence not to see the architecture, but imagine myself climbing over all the walls and hanging off the statues.
